The BEST Paleo Apple Pie EVER!

Do you remember my all time favorite recipe Apple Pie from Spelt Flour (less sugar, less fat, much more apples)? I receive many e-mails thanks of this recipe. You ask me a lot to create Paleo version... So here is it, guys! This is my masterpiece! Amazing crispy crust, lots of apples and vanilla/cinnamon smell.... Heaven on the Earth... just try it!

1 cup of almond flour
6 tablespoons of tapioca flour
4 tablespoons of coconut oil
1/4 teaspoon of baking powder
1/4 teaspoon of vanilla extract

6 big apples
3 tablespoons of honey (or agave sirup)
2 tablespoons of cinnamon powder

Preheat oven to 350°F (180°C).

Mix all ingredients for crust in a big bowl. Put baking paper to a pie mold. Then use your fingers to press crust mixture to the mold. You want thin layer with nice borders.

Put crust to the oven for 10- 15 minutes. Until it's slightly gold.

In the meantime grate apples. I like peel my apples for this type of cake, but feel free keep skin on the apples if you want.

Remove crust from the oven and put half of the apples over the crust. Be careful since mold is very hot in this moment. Use back of a tablespoon to distribute apples in a layer. Then sprinkle over cinnamon over apples and cover it with another layer from the remaining apples. Use the tablespoon again to create a nice layer form apples.

Then cover apples with honey. This will make them extra yummy.

Put the mold back to the oven again and lower temperature to the 212°F (100°C) and bake your pie for 2 hours. Yes it really need 2 hours, because we bake cake at lower temperature. Remove from the oven, let it cool down completely and serve.
