Carrot Salad - with Lemon Infusion

This small salad can be your side veggie. I like it with chicken for example. 

Make a bigger batch and store in the fridge for 2 days max. Then you can grab your daily portion simply any time you need it. 


1 pound carrots, peeled, grated
1 tablespoon freshly squeezed lemon juice, from one lemon
1-2 teaspoons honey, to taste
1/2 cup of filtered water
1/4 teaspoon salt


  1. In a small glass jar, combine the lemon juice, honey, water and salt. Close jar and mix well shaking (workout included hahaha) 
  2. In a salad bowl, combinate carrots and lemon infusion
  3. Cover and refrigerate until ready to serve
